So you have most likely spent all season growing fresh ripe tomatoes in your garden, and now you are looking for something to do with them. Now while we primarily write articles on landscaping ideas, and other ways to improve your yard, it is hard to write a category on tomatoes and not take advantage of all the great recipes out there!
We have put together some fantastic recipes in other articles that you can use your tomatoes for, such as spaghetti and marinara sauces. We also discovered some tasty tomato soup recipes that were absolutely to die for. For that matter we even compiled recipes for fried green tomatoes, which to be honest I never would have tried had they not looked so delicious. So it only seems sensible we continue this journey and look into some tomato bisque soup recipes as well!
Tomato Bisque Soup Recipes as an Appetizer:
This tomato bisque soup recipe will take you approximately one hour to prepare and makes a great appetizer for up to size people. You will need the following ingredients to get started:
1 chopped onion
1 chopped carrot
1/2 ounce bacon, minced
4 tbsp butter
1 chopped celery stalk
4 minced garlic cloves
5 tbsp flour
1 cup cream - heavy
5 cups broth - chicken
28 ounces whole tomatoes - peeled (1 can)
1 3/4 tsp salt
Whole parsley and thyme
Start off by melting the butter in a pot using medium heat. Then mix in the bacon and cook it until crisp. Remove the bacon with a spoon and set aside for later. Add the carrots, onions, garlic, and celery and cook until all are soft. Add the flour and cook for several more minutes, stirring continuously. Add the tomatoes and broth and whisk the mixture until it boils. Reduce heat and allow to simmer for about thirty minutes then remove the pot from the heat and cool. Once the soup has cooled, puree the mixture in a blender until it is smooth. Stir in the cream with a whisk and add enough pepper and salt to taste. Serve and enjoy!
Tomato Bisque Soup Recipes for Canning:
This next tomato bisque soup recipe is a great one if you are interested in canning some of your soup to pull out during those cold fall and winter months. Here is what you need:
2 lbs of fresh ripe tomatoes
1 tbsp sugar
2 bouillon cubes crumbled - beef
1 tsp salt
1 bay leaf
1/4 tsp pepper
1/4 tsp basil
1 qt milk
1/3 cup flour
1/2 cup butter
If you have a food mill, start off by running the tomatoes through it to get rid of the skins and seeds. If you don't have a food mill, you will need to boil the tomatoes to remove the skins, and then scoop out the seeds. Start heating the tomatoes in a pot on medium heat and then add in the pepper, basil, bay leaf, salt, sugar, and bouillon. Bring the entire mixture to a boil and then reduce the heat and allow to simmer for about thirty minutes.
If you are going to can some of your soup for later, this is the time to do it!
To finish up for serving, melt the butter in a saucepan on medium heat and then start whisking in the flour. Allow to cook for about another minute then slowly stir in the milk until the mixture thickens. From here add in the tomato soup from the other pot and stir and heat thoroughly.
Unique Tomato Bisque Soup Recipes:
This next tomato bisque soup recipe is a bit more complex than most but it has incredible flavor. Here are the ingredients you will need:
3 tbsp flour
2 minced garlic cloves
1 carrot chopped fine
1 celery stalk chopped fine
1 onion small chopped fine
1/4 cup butter
4 cups broth - chicken
3 tbsp tomato paste
2 cans tomatoes - diced
1/4 cup cream - heavy
1/4 tsp nutmeg
3 tbsp sugar
Salt and pepper
Start off by melting the butter on medium heat in a saucepan. Once melted stir in the garlic, carrots, celery, and onions and cook until tender and just starting to brown. At this point add the flour and stir for about a minute or two until mixed thoroughly. Then add the tomato paste, nutmeg, sugar, tomatoes, and broth. Bring the entire mixture to a boil, then reduce the heat, cover, and allot to simmer for another fifteen minutes until all of the vegetables have become soft and tender.
If you like your soup smooth, pour the entire mixture into a blender and puree. If you prefer chunky soup, then you can blend a small amount or none at all. Once you have the desired consistency, add the cream and continue cooking until the soup is thoroughly mixed and hot. All that is left is to season your soup with salt and pepper and enjoy!
Easy Tomato Bisque Soup Recipes:
This last recipe for tomato bisque soup is very easy and can go from ingredients to bowl in about 15 minutes. This is a great lunch for the kids or a quick meal if you are on the go. Here is all you need:
1 lb tomatoes (or 2 cans)
1/4 cup flour
1/4 cup butter
1 quart milk
1/2 cup chopped onions
1/2 tsp allspice
1/4 tsp pepper
2 tsp salt
1 tbsp sugar
In one saucepan add the tomatoes, salt, pepper, onions, sugar, and allspice, and simmer for about ten minutes until it forms the consistency of paste. In another larger pan, melt your butter and then whisk in the flour and milk. Simmer that mixture as well until it gets nice and hot and thickens. Combine the tomato paste mixture into the larger pan and stir until your soup is completely mixed and hot. Serve immediately!
